Chicken Meatloaf

Meatloaf made from ground chicken breast is a leaner and lighter meatloaf compared to traditional meatloaf, but still tastes flavorful and juicy. A great kid-friendly recipe for the whole family!

Preheat oven to 375F. Line a large baking sheet with parchment paper.
Combine all the meatloaf ingredients in a large bowl and mix together. Make sure to spread the seasonings all throughout the chicken mixture.
Form a meatloaf shape on the parchment-lined baking sheet.
Bake at 375F for 20 minutes (it won't be fully cooked yet). While the meatloaf is baking, combine all the glaze ingredients in a small bowl and mix together.
After 20 minutes, carefully remove the meatloaf from the oven and spread the glaze on the top and sides of the meatloaf. Continue baking for another 15-20 minutes, or until the meatloaf is 165F in the thickest part. Baking time will depend on the shape of your loaf. Allow to cool for 5 minutes, slice, and enjoy!
