These easy shrimp fritters are loaded with shrimp and are not too doughy. Easy to make and so snackable! This recipe can easily be doubled, and shrimp cakes reheat well in an air fryer, toaster oven, or pan.

Chop the shrimp into very small pieces so that most pieces are about ¼-inch.
In a medium bowl, combine the chopped shrimp with the rest of the ingredients (flour to black pepper). Mix well and chill in the fridge for at least 30 minutes.
Preheat a large skillet over medium-low heat. Add just enough oil to lightly coat the skillet. Drop a small amount (2-4 tablespoons) of the shrimp mixture into the hot skillet, then gently press down to flatten it into a patty. Cook for 3-4 minutes over medium-low heat, or until the bottom is golden brown and the shrimp patty is pink on the bottom half.
Flip the shrimp fritter and use the spatula to press on top to flatten it a little. Cook on the other side for 3-4 minutes, or until fully cooked through. Place the cooked fritters on a plate lined with paper towels.
Let cool for a few minutes (this will help them set further) and serve warm with your favorite dip, such as sour cream or fry sauce.
