Pepitas Pesto (Pumpkin Seed Pesto)

This pesto is made with toasted pepitas for a super fragrant and aromatic pesto sauce for a fraction of the price of using pine nuts. Use it anywhere you would use regular pesto! This recipe makes about ¾ cup pesto and can be doubled.

Preheat a skillet to medium heat and toast the pepitas in a dry pan for 1-2 minutes, or until they start to smell fragrant and you hear popping sounds. Remove from heat and allow to cool while you grab the other ingredients.
Combine all the ingredients, including the toasted pepitas, in a food processor and blend until smooth to your liking. Add extra olive oil as needed, depending on whether you want your pesto saucy for pasta or thicker for spreading. I like a thicker pesto with a little bit of texture.
Use immediately, or store in a sealed container in the fridge for up to 5 days.
