Pepitas Pesto (Pumpkin Seed Pesto)

This pesto is made with toasted pepitas for a super fragrant and aromatic pesto sauce for a fraction of the price of using pine nuts. Use it anywhere you would use regular pesto! This recipe makes about ¾ cup pesto and can be doubled.

0 Preheat a skillet to medium heat and toast the pepitas in a dry pan for 1-2 minutes, or until they start to smell fragrant and you hear popping sounds. Remove from heat and allow to cool while you grab the other ingredients. 1 Combine all the ingredients, including the toasted pepitas, in a food processor and blend until smooth to your liking. Add extra olive oil as needed, depending on whether you want your pesto saucy for pasta or thicker for spreading. I like a thicker pesto with a little bit of texture. 2 Use immediately, or store in a sealed container in the fridge for up to 5 days.View original recipe
